Meet Erin

Restaurant strategist. Fractional CMO. Operator-minded marketer.

Erin Amadeo is a restaurant marketing consultant, hospitality strategist and fractional CMO with nearly two decades of experience helping restaurant brands figure out what’s working, what isn’t — and what’s next.

As Founder and Principal of The Next Course Collective, Erin works with restaurant owners, franchise systems, emerging concepts and multi-unit brands on restaurant brand strategy, franchise marketing, growth strategy, guest experience, digital marketing, local store marketing, menu strategy and brand turnarounds.

Her approach is simple: marketing should do more than look good. It should move the business.

Erin has worked across nearly every side of the restaurant industry — with operators, owners, franchise organizations, emerging concepts, national brands and multi-brand portfolios. Her experience spans executive marketing leadership, restaurant openings, repositioning, franchise growth, loyalty, performance marketing, PR, partnerships, restaurant design and the systems required to make it all work at the store level.

That operator-minded perspective is what makes her work different.
Sometimes the problem isn’t the logo. Or the ad. Or the website.
Sometimes the brand has lost its point of view. Sometimes marketing and operations are moving in different directions. Sometimes growth outpaced the systems.

Erin helps leadership teams connect brand, operations, technology, finance and marketing so strategy shows up where it matters most — in the restaurant, in the guest experience and on the P&L.

Fractional CMO leadership. Restaurant brand strategy. Growth planning. Marketing infrastructure. Turnaround work.

What’s next?  Well, that’s where the work begins.
Meet the Collective
The best work rarely happens alone.

Over the years, I’ve built a circle of operators, creatives, strategists and specialists I trust without hesitation — people who have proven themselves in the work, not just on paper.

They’re the ones I call when the assignment needs more than one set of hands.
No bloated teams. No random roster. Just really good people who know how to move a business forward.

And every name below is here for one reason:
I’d put my own reputation behind them.
This isn't an agency model.
WHAT WE ARE NOT
We're not here to sell you more deliverables.
We're not here to wedge every problem into the service we happen to provide.
And we're definitely not here to hand you a strategy deck and disappear.

The work starts with what the business actually needs.
Sometimes that means marketing. Sometimes it doesn't.

That's the point.
